Fine Dining Pastry Chef

THE RANCH is seeking a passionate fine dining industry leader and role model who is charismatic, honest, self motivated, and thrives in a fast paced, dynamically evolving environment to serve as our Fine Dining Pastry Chef. The ideal candidate is an operationally creative culinary professional with strong fine dining leadership experience and a deep passion for pastry and baking. This role is responsible for delivering elevated guest experiences through exceptional pastry execution and innovation.

This position requires full availability, including early mornings, afternoons, evenings, weekends, and holidays based on business needs.

Our Restaurant, Saloon, and Event Center host elevated dining experiences, private events, weddings, corporate gatherings, and large scale celebrations—making pastry production a critical and highly visible part of our culinary program.

The Fine Dining Pastry Chef oversees the implementation and execution of THE RANCH's pastry program while leading and managing the Pastry Kitchen. Responsibilities include executing established recipes to exacting fine dining standards, maintaining exceptional quality and presentation, and developing innovative, seasonally driven desserts and baked goods for the restaurant, saloon, catering, and special events.

Key Responsibilities:

  • Plan, coordinate, and prepare fine dining pastry items including plated desserts, artisan breads, ice creams, sorbets, creams, simple syrups, amenities, displays/centerpieces, and custom special request items.
  • Lead and develop the fine dining pastry section, working closely with Executive and Sous Chefs.
  • Plan, organize, direct, and supervise all pastry kitchen operations and staff.
  • Monitor and order premium ingredients, supplies, and equipment to support fine dining standards.
  • Collaborate with the culinary team to design custom desserts and baked goods for special occasions and private events.
  • Conduct daily pastry team meetings to review assignments, business levels, menu changes, and operational updates.
  • Ensure adherence to all health and safety regulations while maintaining impeccable cleanliness and organization.
  • Identify staffing needs, assist in recruitment, and train and mentor pastry team members.
  • Develop new seasonal recipes and dessert menus while staying current with industry trends.
  • Inspect the cleanliness and working condition of all tools, equipment, and supplies.
  • Plan and prepare for restaurant service, catering, and high level fine dining events.

Requirements:

  • Minimum 5 years of experience as a Pastry Chef in a fine dining restaurant.
  • Proven leadership experience in a high volume fine dining environment.
  • ServSafe Certified.
  • Demonstrated advanced pastry technique and fine dining operational expertise.
  • Culinary certification or apprenticeship preferred.
  • Ability to stand for extended periods (up to 8 hours).
  • Ability to reach, bend, stoop, and frequently push, pull, or lift up to 50 pounds.
  • Clear communication skills with management, BOH, and FOH teams.
  • Dependable, team oriented, and professional demeanor.
  • Strong attention to detail, organization, and ability to perform under pressure.
  • Full availability, including early mornings, afternoons, evenings, weekends, and holidays.

Compensation & Benefits:

  • Job Type: Full Time
  • Schedule: Full availability required including early mornings, afternoons, evenings, weekends, and holidays
  • Salary Range: $75,000 – $80,000. Pay may vary depending on experience, qualifications, and other job-related factors.
